  • New Favorite Thing – Double Chocolate Zucchini Cake

    Our neighborhood block party brings out some great food and I look forward to it every year. Each family brings something to share and this year the favorite was the Double Chocolate Zucchini Cake.

    Boo was the first one to eye the cake. It was on the outside edge of the table, right at eye level and he saw the chocolate chips sprinkled on top. His eyes got big, he began to reach for the cake and chant "chocate".

    I have to admit, if you are a chocolate fan like I am the cake looks inviting, it is a chocolate cake with chocolate chips throughout and sprinkled on top – a chocolate lovers dream.

    After a little convincing, Boo ate some real food before heading for the chocolate decadence. The cake was so moist that he wore as much as he ate and he was in heaven.

    AJ, seeing his brother with chocolate cake, stopped playing to check it out. AJ, being vegetable adverse, believes that they are the worst thing on the planet. It has been a struggle for the past year but he has been getting better with vegetable that are not green. I did not tell AJ that the cake was made with a green vegetable becasue he thinks that green means gross.

    He ate his dinner in anticipation of the delicious looking cake. Then he took a piece, ate it all and asked for seconds. He had no idea that there was zucchini in the cake and honestly neither did I when I first tasted it. It was wonderful, moist and did not have any zucchini taste or visible pieces. I am sure that you could find some if you took the time to stop eating and look for them but who is going to stop eating when the cake is so good?

    After watching my kids devour the cake I asked for the recipe. The cake was made without any frosting and was full of nutritious zucchini, a double win for a mom with a picky kid who likes frosting more than cake.

    From now on I will be making a homemade cake for holidays and special occasions. I am not sure where my neighbor Debbie got the recipe but here it is for you to enjoy.

    Double Chocolate Zucchini Cake

    2 1/2 cups flour
    1/2 cup cocoa
    1 tsp baking soda
    1/2 tsp salt
    1/2 c butter
    1 1/2 cup sugar
    1/2 cup oil
    2 eggs, beaten
    1 tsp vanilla
    1/2 cup milk
    2 cup grated zucchini
    6 oz chocolate chips – or more ; )

    Combine flour, cocoa, soda, and salt. Cream butter and sugar; beat in oil, eggs and vanilla. Add the milk while alternating with dry ingredients to the butter mixture. Fold in half of the chocolate chips.

    Pour into greased 9x13 baking pan and sprinkle remaining chips over top.

    Bake at 325 degrees for 35 to 45 minutes.
